1 Onion, thinly sliced
1 Green capsicum
2 Green chillies
3 cloves Garlic
1 tsp Cumin powder
1/4 tsp Garam masala
1/4 tsp Cayenne pepper
1 tbsp Sugar
4 Eggs
1/2 bunch Coriander, stems chopped and leaves picked
3 tbsp Extra virgin olive oil
1 tbsp Butter

Preheat the oven to 180°C fan-forced.
Set a thick-bottomed pan on a low flame. Add oil and butter. Add in the sliced onion, green chillies and garlic and 2 pinches of salt. Toss gently for 2-3 min, adding in the spices and until the onion has turned a soft, pale colour.
Add green capsicum and sauté till cooked through. Add baked beans and 100ml of water to wet the mixture and allow to cook for 4 minutes. Add in the sugar.
Gently break the four eggs directly on to the beans and do not mix at all. Cook it in the oven for 5-10 minutes.
When the eggs are no longer translucent, turn off the flame and garnish with freshly chopped coriander.
Serve with toasted sourdough.
