Fresh Pacific Oysters with Kilpatrick Sauce
12 pieces Fresh Pacific Oysters
100 g Middle Bacon Rashes
3 cloves Garlic, minced
2 tbsp Chilli Sauce

Preheat oven 180c fan forced.
Dice bacon and place on oven tray. Cook until slightly crispy - approx. 20 mins.
Remove from oven, tilt tray to drain excess fat. Remove bacon from tray.
In medium bowl add ketchup, BBQ sauce, garlic, Worcestershire sauce and tabasco sauce. Whisk.
Fold in cooked, diced bacon and combine.
Place oysters on rock salt on oven tray, spoon bacon Kilpatrick sauce on top.
Place under grill until top is crisp, remove, garnish with chopped chives.
